The Pacific branch of VNIRO reviewed materials on technological standardization of products from invertebrates and algae

Researchers from the Pacific Branch of the Russian State Research Center of Fisheries and Oceanography (VNIRO) reviewed the rationale for the values ​​of waste standards, losses, finished product yields and raw material consumption in the production of fish products from invertebrates and algae to form a new basin collection.
 
The materials were prepared by specialists from the laboratory of standardization, regulation and technical regulation.
 
According to the guidelines for technological standardization of the output of processed aquatic bioresources and aquaculture objects, the validity period of the collection "Basin standards of waste, losses, finished product yields and raw material consumption in the production of fish products from invertebrates and algae of the Far Eastern basin" is 3 years. After its expiration, scientists update the standards taking into account the state of the raw material base, biological characteristics of aquatic organisms, maximum savings in raw materials, and improvements in the equipment and technology used.
 
In 2025, the branch developed a new collection of conversion factors for the removal of commercial invertebrates of the Far East.
 
The standards for waste, losses, finished product yield, and seafood catch accounting coefficients were determined using current methods approved by the Federal Agency for Fisheries.
 
Based on the analysis, the scientists created databases of experimental and control works, raw material consumption values ​​for the production of the same types of products on the same type of equipment with the same processing technology, and determined the standards for waste, losses, finished product yield, and raw material consumption for the production of frozen products from Far Eastern aquatic organisms (for example, boiled and frozen semi-finished products from spiny crab, snow crab, opilio, northern shrimp), and for the first time, conversion coefficients were developed for products from the visor shrimp of the North Okhotsk Sea subzone of the Sea of ​​Okhotsk.
