Survey of fish farm capacities and caviar grading

Specialists from the Ural branch of the All-Russian Research Institute of Fisheries and Oceanography (VNIRO) participated in the work of the Lower Ob Territorial Administration commissions to inspect aquaculture facilities and assess whitefish eggs stored for subsequent fish seed production.
 
The inspected fish hatcheries include those of A.N. Petrov, a private farm enterprise in the Kurgan Region, the Shchershni Fish Hatchery LLC (Chelyabinsk), and the Aquaculture LLC fish farm (Verkhuralskoye Reservoir).
 
Capacity monitoring is necessary to monitor the progress of artificial reproduction of aquatic biological resources.
 
Peled eggs, collected from wild spawners, are incubated in Weiss hatcheries. Peled (Coregonus peled) is a lake and river fish of the whitefish genus.
 
Peled spawn in the fall, during the ice-covered period, from September to December, in lakes, spring outcrops, and rivers, on pebbly bottoms.
 
Peled are commercially important and are bred artificially in pond farms. Breeding is carried out in many regions of Russia, including Moscow, Leningrad, Kursk, and the Urals.
 
The name "syrok" refers to the traditional method of preparation: the fish is salted so quickly that it can be eaten almost raw.
