Technologists from the Tyumen branch of VNIRO are creating scientific justifications for developing standards for the yield of smoked fish products

Specialists of the fish products technology sector of the Tyumen branch of the State Research Center of the Russian Federation "All-Russian Research Institute of Fisheries and Oceanography" (VNIRO) conducted experimental and control work to determine the yield standards for smoked fish products at the largest fish processing enterprise of the Khanty-Mansiysk Autonomous Okrug - Yugra "Nizhnevartovsk fish canning plant "Santa Maria".
 
Scientists determined how much waste and loss occurs in production when smoking fish from the carp, perch and pike families. The results of these experimental and control works will form the basis for developing new and updating the current yield standards for finished smoked products.
 
Determining waste and loss in the production of fish products is an important stage for optimizing the production process and increasing its profitability. To do this, scientists conduct a set of experimental works that allow them to determine how much raw material is consumed at each stage of production: from defrosting fish to packaging the finished product.
 
Scientific research is conducted in accordance with approved regulatory documents:
 
– methods for determining raw material consumption rates in the production of products from aquatic organisms. They contain general principles and approaches to determining losses, as well as specific recommendations for taking into account various factors affecting the yield of finished products;
 
– collections of technological instructions for fish processing. They contain detailed descriptions of technological processes used in the production of smoked fish and allow identifying potential sources of losses at each stage.
 
“We analyze the data obtained and, in the future, use it to determine the actual raw material consumption rates and identify opportunities to reduce losses. This allows us to optimize the technological process, reduce the cost of production and increase its competitiveness,” explains Vladislav Neverov, head of the fish products technology sector of the Tyumen branch of VNIRO.
 
Experimental work to determine the standards for output, waste and losses in the production of smoked fish products, carried out in accordance with established methods and instructions, is an integral part of effective production management and ensuring high quality food products from aquatic organisms of inland waters of the West Siberian fishery basin.
